On 5 May 2025, Meat & Livestock Australia (MLA) and Global Victoria hosted the Aussie Lamb Masterclass: Market Updates and Culinary Innovation Showcase at Hilton Singapore, an exclusive industry event that united professional chefs, trade partners, and foodservice leaders for an afternoon of premium knowledge sharing and live culinary inspiration.
The event opened with MLA’s Regional Manager for Southeast Asia, Valeska, who shared positive insights on the Australian sheepmeat industry outlook for 2025. Attendees received updates on red meat supply trends, global demand, and evolving consumer preferences.
A key highlight was the expert butchery demonstration by Australian Master Butcher Rafael Ramirez, who showcased nose-to-tail lamb cutting techniques, offering valuable knowledge on maximising product variety and value.
In the spotlight were Singapore’s Lambassadors, Chef Elvin Chew, Chef Eddie Goh, and newly appointed Chef Nadine Tay, each presenting innovative dishes using lamb leg bone-in chump on, shoulder racks, flap, and shoulder banjo. These lesser-known cuts offered fresh culinary possibilities for Southeast Asian menus, highlighting the versatility and premium quality of Australian lamb.
Chef Nadine Tay shared, “It was a fantastic opportunity to showcase the incredible versatility of Australian lamb and inspire others through innovative applications.”
The event concluded with remarks from Naïla Mazzucco, Commissioner to Southeast Asia at Global Victoria, who emphasised the importance of the Lambassador program in deepening trade and cultural ties through food.
This masterclass was part of MLA and Global Victoria’s broader mission to promote sustainable, high-quality Australian red meat and foster culinary collaboration across the region.
The momentum continues as 16 global Lambassadors embark on a paddock-to-plate tour in Victoria (6–11 May 2025), gaining firsthand experience with Australia’s premium lamb production. Their learnings will be shared across markets to further champion the benefits of Australian lamb.
