Marinate the steaks in the garlic, ½ tablespoon oregano, and ½ tablespoon oil. Cover and refrigerate for 30 minutes or up to overnight.
To cook:
Preheat a ridged chargrill or barbecue over moderately high heat.
Season the steaks with salt and pepper and grill for 3–4 minutes on each side or until cooked to your liking.
Place on a plate, loosely cover with foil, and allow to rest for 5 minutes.
For the salad:
Mix the remaining olive oil with the rest of the ingredients and season with salt and pepper.
